What about cycling.
Goes on for hours without anything happening, and ends in a mass-sprint anyway. They could just put the cyclists on some exercise-bike for a couple of hours and then have a race over a mile or so. Then the traffic doesn't get screwed up...
Or marathon running, also very boring to watch.
Oh, and darts of course. Good fun to play, boring to watch.
And what about bowls? Don't understand why BBC sometimes broadcast it... just as boring as curling.
Well, then a bit on-topic for the hell of it:
Can't really choose between all of them. Think you can't say there is one. You might pick a most talented player for a certain position though. But even then, it's a team sport (ok, some players seem to forget that...), one might be very talented in some way, but if the player in that position requires some other abilities to function better in the team it's useless.
If I had to choose I'd probably go for Messi though. Ronaldo was absolutely terrific last year, and has huge talent, but I'd put Messi slightly above him.
